Black Truffles
The most desirable varieties of black truffle are the Perigord or black winter truffle tuber melanosporum, and the black summer truffle tuber aestivum. Black winter truffles are also known in Italy as il tartufo nero di Norci, taking their name from the small hilltop town in central Umbria famous for its surrounding truffle groves. The growing period for black winter truffles is November through to March, with the producing areas in Italy being Umbria, Piedmont, Marche, Abruzzi, Molise and Lazio.
Due to their ready availability black summer truffles are now the best known and most widely used variety of truffle. Benefiting from a long growing season, this variety of truffle can be enjoyed almost throughout the year.
