White Truffles
In Italy there is no other expression but tartufo bianco to indicate the tuber magnatum pico. The gathering season is from September through to December. Because it is very specific to damp well aerated soils white truffles do not grow in France where the soil is heavier. The main producing regions in Italy are Piedmont, Tuscany, Emilia Romagna and Marche. They are usually found in close proximity to lime, hazel, oak and poplar trees, with each type producing a slightly different coloration in the flesh varying from pale chestnut to hazelnut. The gleba (pulp) is creamy yellow with white veins which turn red when exposed to air.
White truffles must always be enjoyed raw, thinly sliced using only a truffle slicer over hot dishes.
